Raging Romaine Holiday Salad

Ingredients:
1) 4-oz. box of Raging Romaine
2 small navel oranges, peeled and sliced into rounds
⅓ cup pomegranate arils
⅓ cup pecorino, grated
¼ cup sliced almonds

For the maple vinaigrette:
¼ cup balsamic vinegar1 Tbsp. maple syrup
½ shallot, finely chopped
½ tsp. Dijon mustard
½ cup extra virgin olive oil
¼ tsp. Kosher salt
¼ tsp. freshly ground black pepper

For the maple vinaigrette:
Combine all ingredients in a blender and blend until smooth. Set aside while the rest of the salad is assembled.

To assemble:
In a large serving bowl or platter, add the Raging Romaine. Evenly distribute the orange slices, pomegranate arils, pecorino, and sliced almonds on top of the Raging Romaine. Drizzle Maple Vinaigrette over top (to taste) and serve immediately.
