Prosciutto and Unruly Arugula Roll Ups

Ingredients:
1 lb. asparagus, trimmed, steamed and chilled
(1) 4-oz. package of sliced prosciutto
(1) 5.3oz. wedge of Goat Gouda (or Manchego), sliced into thin wedges
(1) 4-oz. box Unruly Arugula
1 lemon, cut into wedges
Freshly cracked black pepper
(1) 4-oz. package of sliced prosciutto
(1) 5.3oz. wedge of Goat Gouda (or Manchego), sliced into thin wedges
(1) 4-oz. box Unruly Arugula

Steps:

Place one piece of prosciutto, folded lengthwise, on a work surface. Top the prosciutto with a slice of Goat Gouda (or Manchego, if using), two asparagus spears, and a handful of Unruly Arugula. Wrap the prosciutto around to the front to secure the bundle.

Repeat the process to compose the remaining roll-ups. Place roll-ups on a serving platter and serve with lemon wedges and freshly ground pepper on the side.
