Fig, Burrata, and Unruly Arugula Salad

Ingredients:

(1) 4-oz. box Unruly Arugula
4 ripe figs, halved lengthwise
(2) 4 oz. balls of burrata
¼ cup balsamic vinegar
1 Tbsp. honey
¼ cup extra virgin olive oil
Kosher salt
Freshly ground black pepper
2 slices of grilled (or toasted) ciabatta, for serving

Steps:

To make the balsamic vinaigrette:

In a small bowl, whisk together the balsamic vinegar and honey. While whisking, stream in the extra virgin olive oil. Season to taste with kosher salt and freshly ground black pepper. Set aside.

To assemble:

In a large bowl, add the Unruly Arugula along with 2 Tbsp. of the balsamic vinaigrette. Gently toss to coat then arrange dressed arugula on a large serving platter.

Carefully tear each ball of burrata into thirds or fourths and nestle the pieces into the dressed arugula, followed by the halved figs.

Garnish with another drizzle of the balsamic vinaigrette over the top and serve with slices of grilled ciabatta on the side.
